Oven-Baked Chicken Thighs with Potatoes

🔪 Instructions

Step 1: Heat the Oven
Preheat your oven to 200°C (400°F). Lightly grease a large baking dish or line it with parchment for easier cleanup later.

Step 2: Mix the Marinade
In a mixing bowl, combine the olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Stir until everything is well blended.

Step 3: Season the Chicken and Potatoes
Add the chicken thighs and chopped baby potatoes to the bowl. Toss until fully coated in the herb-garlic mixture.

💡 Want deeper flavor? Let it marinate for 30 minutes before baking.

Step 4: Layer in the Baking Dish
Transfer the chicken and potatoes to your prepared dish. Place the thighs skin-side up, and spread the potatoes around them evenly.

🍋 Optional: Squeeze lemon juice over everything for a fresh citrus kick.

Step 5: Bake Until Perfect
Place in the oven and roast for 45–55 minutes, or until:

  • Chicken reaches an internal temperature of 75°C (165°F)
  • Skin is golden and crispy
  • Potatoes are tender and caramelized

🔁 At the halfway mark, baste the chicken with pan juices and give the potatoes a stir for even browning.

Step 6: Let It Rest and Serve
Allow the chicken to rest for about 5 minutes before plating. Serve with your favorite sides like:

  • Steamed greens (green beans or broccoli)
  • A fresh salad
  • Roasted veggies like carrots or Brussels sprouts
