-Carrot Salad with Pineapple & Walnuts

A creamy, fruity, and crunchy salad, perfect as a refreshing dessert or a side dish!

Ingredients

  • 4 carrots, peeled and grated

  • 300g pineapple in syrup, diced

  • ½ cup pineapple syrup

  • 100g finely chopped walnuts

  • 75g raisins

  • 360ml sweetened condensed milk

  • 480ml whipping cream

  • 1 tbsp vanilla extract

    1. Blend the creamy base:
      In a blender, mix the condensed milk, whipping cream, vanilla, and about 2 tablespoons of pineapple syrup. Blend until smooth and creamy.

    2. Prepare the salad base:
      In a large bowl, combine the grated carrots, diced pineapple, remaining syrup, chopped walnuts, and raisins.

    3. Mix everything together:
      Pour the creamy mixture from the blender over the carrot mixture. Gently stir until the carrots are well coated.

    4. Chill before serving:
      Refrigerate for at least 2 hours to allow the flavors to meld and the salad to set.
