1 cup (250ml) tomato sauce or salsa of your choice,
1 can (400g) black beans, drained and rinsed,
1 cup (250g) frozen corn, thawed,
2 cups (200g) shredded cheddar cheese,
2 cups (200g) shredded mozzarella cheese,
6 large flour tortillas (corn for a gluten-free version)
, ½ cup (120g) sour cream (optional, for serving),
2 tbsp chopped fresh cilantro (optional, for garnish)

Preheat the oven to 180°C (350°F) and grease it with 9x13 powdered shortening.
Cook the onion: In a pan, heat the olive oil over medium heat and cook the onion until it boils (approximately 3 minutes).
Cook the meat: Add the meat and cook until browned, breaking it up with a spoon. Remove any excess fat if necessary.
Add the seasoning: Stir in the taco seasoning and tomato sauce. Simmer for 5 minutes to allow the flavors to meld.
Mix the ingredients: Combine the black beans and corn, stir well, and remove from the heat.
Assemble the casserole:
Place a tortilla in the bottom of the baking dish.
